Decades ago, two Guizhou fellas living in Xinjiang introduced their hometown’s rice noodles to the region. But Xinjiang, with its bold flavors and love for spice, demanded something different. So, the dish evolved — infused with local ingredients, fiery chilis, and a heartier, more robust character that suited the tastes of the people.
What started as an experiment soon became a sensation. Street stalls, small eateries, and bustling markets embraced this new take on rice noodles, turning it into a staple among the young and the hungry.
